50% chardonnay, 30% pinot noir and 20% pinot meunier with a small amount of still pinot noir. Salmon in color, the bouquet highlights moderately intense aromas of dried berry mingling with hints of fruit cocktail syrup. The round, rich and flavorful midpalate is of medium-plus weight that continues towards the back where the soft finish fades a touch too quickly. The backpalate reveals concentrated flavors of soft berry and cherry that form the foundation of the understated finish. An elegant interpretation of rosé here.

Broad and sappy but dry, with lively orange and strawberry flavors and a subtle note of spice cake. Weightier on the finish, which features an exotic note of spicy herbs. This Champagne's delicate touch will make it work well with simple seafood dishes or even sashimi. -JR

About Winery

Champagne Billecart-Salmon was founded in 1818, with the marriage of Nicholas Francois Billecart and Elisabeth Salmon, and is run today by their descendent, Francois Rolland-Billecart. The firm owns 74 acres of its own vines, and buys in grapes from another 346 acres as well. Ninety percent of the fruit comes from within a 20-mile radius of Epernay, with some 35 crus contributing.
