Forman's 1991 Cabernet Sauvignon (packaged in a heavy, broad-shouldered bottle) may be the most impressive Cabernet he has made. The wine's softer, fleshier palate suggests a lighter hand in acidification. The saturated black/ruby/purple color is followed by copious aromas of wonderfully rich and ripe cassis, intertwined with vague mineral and vanilla scents. Full-bodied, with terrific richness, layers of fruit, and a multidimensional personality, this gorgeously made, opulent Cabernet Sauvignon can be drunk now or cellared for 15-20 years.

Dark and inky, young and raw like a barrel sample, but with lots of concentrated currant, spice and cherry flavors and a peppery finish. The tannins are raw too, so wait until 1997 or 1998. 2,000 cases made.
