The 1995 Cabernet Sauvignon exhibits an opaque black/blue color, and a marvelously complex, blackberry/blueberry, cedary, chocolatey, licorice-scented nose. The flavors unfold on the palate, with a gorgeous display of opulence, purity, and super-extracted, rich fruit. This will undoubtedly be a great California Cabernet Sauvignon that will have 20-25 years of aging potential. Cabernet Sauvignon is king at Togni, and they are wines of extraordinary concentration, flavor dimension, and aging potential. The 1995 Cabernet Sauvignon, a vintage that produced a number of top-notch wines (as well as some with rough tannin and muted personalities), is one of the year's bright shining successes. The wine displays an opaque purple color, as well as a lavishly intense nose of blackberry/blueberry/cassis fruit intermingled with chocolate and olive nuances. Dense and fruit-driven, with awesome levels of glycerin and extract, this formidably endowed, moderately tannic wine should be at its best with another 7-8 years of cellaring. Once again, Philip Togni has produced a wine with 25 or more years of aging potential. Part mountain goat, part man, Philip Togni continues to fight vineyard diseases such as Pierce's, and frightfully low yields from his formidably steep Spring Mountain vineyards to produce some of California's most exciting wines. Since nearly 70% of Togni's wines are sold directly to wine consumers, it is incumbent upon readers wanting an opportunity to buy this wine to get their names on the winery's mailing list. Tel. Philip Togni is one of Californiaâ_Ts most foresighted winemakers, holding back a small amount of wine and releasing it at age ten. This year, small quantities of the 1995 Cabernet Sauvignon Estate were released, and, as I almost invariably do, I rated it higher than I did initially. It is a classic Cabernet Sauvignon that apparently turns to Bordeaux for elegance, structure, and complexity, yet retains Napaâ_Ts extraordinarily sweet, rich, concentrated fruit. This profound 1995 still tastes like an adolescent. For my palate, it will benefit from another 4-5 years of bottle age, and should last easily for another 20-25 years. It is unquestionably one of Californiaâ_Ts as well as the worldâ_Ts greatest Cabernet Sauvignons. As a postscript, I want to acknowledge a wine Philip Togni produced early in his career at Chappellet, the 1969 Cabernet Sauvignon. Recently, one of my dearest friends, Dr. Jay Miller, was feting his 60th birthday, and brought a bottle of this wine along with a collection of profound museum pieces. Togniâ_Ts â_~69 may be one of the greatest California Cabernet Sauvignons I have ever tasted. Every bottle I have had seems to get better and better. This 36-year-old wine tastes like a 14- or 15-year-old adolescent except for the extraordinary soaring aromatics of creme de cassis, spice box, incense, and cedar. In the mouth, itâ_Ts gorgeously fresh, full-bodied, super-concentrated, and revealing no signs of age. It is both a monument to California Cabernet Sauvignon and an homage to a feisty British-born winemaker who continues to turn out some of the worldâ_Ts most interesting wines. Tel. Marked by a strong cedar and tobacco flavor, this wine veers into spicy bell pepper and herbaceous territory yet holds on to its currant-laced core of Cabernet flavors. Firmly tannic, complex and concentrated, it needs aeration and may always be on the tannic side. Drink now through 2008. –JL
