Cabernet Sauvignon is king at Togni, and they are wines of extraordinary concentration, flavor dimension, and aging potential. The 1996 Cabernet Sauvignon, which I had a peek at last year, has indeed turned out to be a monumental effort, comparable in quality with his 1994, 1992, and 1991. An opaque purple/black color is followed by a knock-out nose of blackberry, tobacco, chocolate, and licorice-infused aromas. The wine's opulence, flavor extraction, full body, and silky texture will make it an amazing beverage to taste and consume over the next 20-30 years. Sadly, production was only a meager 48 barrels (approximately 1,100 cases). Part mountain goat, part man, Philip Togni continues to fight vineyard diseases such as Pierce's, and frightfully low yields from his formidably steep Spring Mountain vineyards to produce some of California's most exciting wines.

The opaque purple-colored 1996 Cabernet Sauvignon is a blockbuster monster crammed with phenomenal potential. It offers up a sensational nose of licorice, chocolate, cassis, Provencal herbs, and pain grille. The wine is succulent and full-bodied, as well as extraordinarily powerful and backward. It should be drinkable within 5-7 years, and age beautifully for three decades.

Very dark red-ruby. Roasted, liqueur-like aromas of black plum, black raspberry, licorice and oak spice. Lush and thick, but given shape by an edge of acidity. Intriguing vegetal and vanillin notes add to the wine flavor interest. A more muscular style of wine than the '97, with a firm acid/tannin backbone, but the tannins are very nicely managed. 91(+?) points

Saturated dark ruby. Exotic, nuanced nose combines dark berries, dark Valrhona chocolate, game, orange peel and a hint of apricot. Powerful and dense but juicy, with very strong extract and sappy sweetness in the middle palate. Firm acids give this large-scaled wine lovely clarity of flavor. Complex and flamboyant through to the very long finish, which features dusty, fine tannins and notes of dark berries, leather and chocolate. Has real soul. 92-95 points

Distinctive for its coffee bean, herbal and complex berry flavors, this wine is intense, with a chewy core of currant and blackberry flavors.
