About the Wine
"All of the lots were kept separate through aging to retain their individual characteristics. After gentle crushing, the Chardonnay juice was fermented in French oak barrels (80 percent new) to enhance the natural richness in the wine. Lees stirred weekly to encourage a nutty-toasty character and fully integrate the oak flavors, encouraging a good balance. All of the wines were put through maloactic fermentation to encourage a lush creaminess. After 10 months of aging, the winemakers chose the richest, most expressive lots and blended them to create an intensely aromatic and flavorful wine with lemon meringue, ripe pineapple, brown spice, and buttered-toast components that intermingle seamlessly and follow through to a persistent, full-mouthed finish."
