1997 Paolo Scavino Barolo Cannubi Nebbiolo

For many Barolo lovers, Cannubi is the most exceptional cru. A grand cru needs more attention in the vineyard so that the wine can express all of its elegance. In order to maximize
the conditions of the vintage, Enrico Scavino must be a haute couture tailor in the vineyards. The soil in the Cannubi region is typical tufo which is composed of gray silt-sand, marl, sometimes bluish or whitish-gray on the surface. The Cannubi vineyards were ﬁrst planted in 1946. The grapes are hand harvested normally during the ﬁrst 10 days of October.
Maceration and the fermentation occur in steel rotary Malolactic fermentation follows in oak barrels. Aging in French oak barriques for 12 months and further 12 months in large French oak casks and ﬁnally 12 months in bottle.
The Paolo Scavino winery was founded in 1921 by Enrico Scavino's
grandfather Paolo. Today Enrico runs the winery with the help of his
daughters Enrica and Elisa. The winery is located in Castiglione
Falletto, one of the eleven communes of the Barolo appellation, in the
historical Langhe hills. The Scavino winery is rare in their possession
of grand cru's in six of the eleven villages of Barolo. The Scavino
family owns grand cru vineyards in the townships of Castiglione
Falletto, Barolo, La Morra, Roddi, Verduno and Serralunga. This
diversity of terroir gives the Scavino's a unique opportunity to produce
wines of extraordinary quality. The single vineyard crus have been a
personal mission of Enrico since he conceived and created the Bric del
Fiasc single vineyard label in 1978: The first Scavino cru. The
uniqueness of each vineyard's terroir today can be tasted in their four
esteemed single vineyard bottlings.
2010 will be Enrico's 60th year as the winemaker of Paolo Scavino.
