About the Winery Bon Pasteur
"Chateau Bon Pasteur lies to the northeast of the town of Pomerol, its vineyards located on both gravel and clay soils. The property is inextricably linked with the world famous oenologist Michel Rolland whose advocating of late-harvesting the Merlot grape and new oak maturation has been adopted by many vignerons around the world, though not necessary to unanimous approval. The encepagement of the wine is 80% Merlot and 20% Cabernet Franc.
Le Bon Pasteur's grapes are hand-picked and are fermented in temperature-controlled-stainless steel vats. The wine is then matured in oak casks (80% new) for 18-20 months. It is bottled unfined and unfiltered. Le Bon Pasteur produce supremely well-balanced Pomerols that are supple and packed with juicy, lush Merlot fruit."

"Some very good results on the Left bank. Sauterne wines are excellent and ready to be drunk now. ..the wines have now made significant improvements. A good early growth that was followed by low temperatures has cut back the buds. Essentially a rainy season for St-Emilion, Pomerol and Grave with abundant yields. An average year for this part of Bordeaux..."
