"100% estate Cabernet Sauvignon is made entirely from the grapes grown in the vineyards adjacent to PlumpJack Winery located on Oakville Cross Road, Oakville AVA, Napa Valley... this Cabernet was hand-harvested from October 7th to October 18th, 1998 at an average of 24.5 degrees Brix, measurable acidity of .56 and pH of 3.69 for a total of 81 tons FERMENTATION... after a 12 hour cold soak, the fermentation was temperature-controlled using a moderate yeast and continued to dryness for a period of 7 days... AGED at PlumpJack Winery in a specially selected combination of 75% new and 25% older French oak cooperage, where it remained for 20 months BOTTLED... July 24th through July 28th, 2000 OUR THOUGHTS... This is our fourth vintage of 100% Estate Cabernet Sauvignon. In the aroma we find warm, sweet spice, vanilla extract, mint, bittersweet chocolate, extracted black cherries and a hint of sweet smoke. It's firm, pleasant acidity and moderate tannins are followed by nutmeg, ripe raspberries and more ripe cherries, bittersweet chocolate and coffee, transitioning to sweet, light toasted oak. Our 1998 Cabernet's lingering, complex finish gives us clear assurance that its anticipated life span of 10 to 15 years is well warranted..."- Winemaker, Plumpjack
