A ripe, soft wine that still does manage to preserve the Ayala lightness of touch. The fruit is green apple and pink grapefruit, with great freshness. The structure, though, is open and hints of yeast show through the fruit. The aftertaste is deliciously fresh.

About Winery

The house of Ayala can trace its roots back to 1860 when Edmond de Ayala received vineyards and a chateau as part of his dowry when he married. The subsequent years were tumultuous for the house with the chateau destroyed during the Champagne riots and the estate later sold at auction during the Great Depression. Recently, the house has changed ownership twice over the last decade.

Despite all the changes in the commercial office, the winemaking reins have held steady for some time with chef de caves Nicolas Kym having held that position for over 30 years. Under the new regime, Ayala is now dependent entirely on purchased fruit so Kym has taken this opportunity to revise his approach towards the portfolio. One of the stronger trends in today's champagne market is the move to lower, or even zero, dosage additions to the wine prior to bottling and all the wines at Ayala are now following this approach. The results are wines of delicacy and subtlety.
