One of the world's, as well as Napa's, most profound Cabernet Sauvignons is the 2,000 or so case production of Shafer's Hillside Select. Made from their finest parcels in Stags Leap, the wine spends nearly 32 months in 100% new oak. This is a wine that usually has 20-30 years of aging potential. 2003 Cabernet Sauvignon Hillside Select (just released) shows some graphite and pain grille notes intermixed with creme de cassis, licorice, camphor, and some spice box. Full-bodied, powerful, with fabulous fruit, silky tannins, and an intense mouthfeel, this is a gorgeous wine to drink over the next 20-25 years. One of Napa's most prominent and respected wineries, Shafer is a poster boy for remarkable and consistent quality across the board. All of this is the work of the brilliant father and son team of John and Doug Shafer as well as their long-term winemaker and vineyard manager, Elias Fernandez. With over 200-plus acres of estate holdings, and 55 surrounding their winery in Stags Leap, this is a winery that never seems to disappoint. Previously recommended: 2003 Relentless (93), 2004 Merlot (88), 2002 Cabernet Sauvignon Hillside Select (100). Tel. (707) 944-2877; Fax (707) 944-9454

Medium ruby. Aromas of black raspberry, currant, cocoa powder, cedar, graphite, violet, licorice and sweet oak. Lush and very sweet but with lively mint and naphtha notes lifting the flavors of black cherry, dark berries and dark chocolate. Finishes with a firm edge of tannins and acids and yet this wine should give early pleasure. I find a wider range of ripeness here than in the supernal 2002.

A big, rich, bold and expansive style, with tiers of dense currant, mineral, earth, black cherry, anise and cedary oak flavors that are intense and concentrated, with the tannins showing a raw edge. Young and rambunctious. Needs lots of air or a little time in the cellar. Best from 2008 through 2013. 2,200 cases made. –JL

About Winery

Shafer Vineyards traces its beginnings to 1972 when John Shafer left a 23-year career in the publishing industry and, with his family, moved to the Napa Valley to pursue a second career in wine. After purchasing a 210-acre estate in Napa Valley's Stags Leap District, the Shafer family faced the arduous task of replanting the existing vineyards, which dated to the 1920s, and terracing the steep and rocky hillsides, eventually expanding vineyard acreage to its current 50 acres.Evolving from grape growers to vintners, the Shafers crushed their first Cabernet grapes in 1978 and began construction on their winery a year later.

The first Shafer Cabernet became a benchmark, winning the acclaimed San Francisco Vintners Club taste-off upon release and, over a decade later taking first place in an international blind tasting held in Germany, where it outranked such wines as Chateau Margaux, Chateau Latour and Chateau Palmer.

Doug Shafer became winemaker in 1983 after graduating from the University of California at Davis with a degree in enology and viticulture. A year later Elias Fernandez joined the winery as assistant winemaker. Together Doug and Elias have worked closely to forge the Shafer style of quality, consistency and elegance.
