2004 Atlas Peak Cabernet Sauvignon
Cabernet Sauvignon: 750ml
$29.99
about this wine:
Over time it became clear that Atlas Peak's most valuable hidden resource was literally underfoot: the elevation of its vineyards. Grapes grown at this high elevation, above the natural fog line, experience much lower daytime temperatures than those on the valley floor, allowing the grapes to stay cool while gaining maximum sun exposure. As a result, mountain growers can afford to harvest later and pick for optimal flavor without the risk of over ripe fruit and excessive alcohol. While this strategy benefits many varietals, no grape variety develops as well in mountain conditions as Cabernet Sauvignon.

Dark ruby/purple core with a ruby rim. Raspberry, cocoa powder and orange zest on the nose followed by cooler blueberry notes with a touch of graphite, earthy violets and spicy vanilla. Sweet entry on the palate with ripe cassis, black cherry and blackberry dominating. Medium bodied with fairly bold tannins through the finish. Touch of charcoal and plenty of toasted vanilla and oak join the sweet fruits on the finish.

A beautiful Cabernet that shows a firm structure of acids and tannins, with perfectly ripened fruit that seduces the palate but doesn't go overboard. Floods the mouth with black currants, black cherry pie filling and cedar flavors, but stays firmly dry and balanced. Now through 2012.
