88-91 points, Burghound October 2006 This is the most aromatically complex of the three climats eligible to be included under the umbrella of Montmains (Montmains proper, Foręts and Butteaux) with floral and airy aromas trimmed by subtle spice and oyster shell notes that introduce rich, full and intense flavors that display a distinct saline character, all wrapped in a punchy, racy and vibrant finish. Lovely and distinctly different from its two counterparts.
88 points, Stephen Tanzer July 2007 ($36) Pale bright yellow. Slightly reduced, lower-toned aromas of silex, stone and truffle. Round and large-scaled but dry and backward; almost monolithic today but with very good volume. Initially I wanted more definition and cut, but this tightened up quickly in the glass, showing good lemony acidity.

About the Winery Michel, Domaine Louis
Chablis was made famous by the merchants of Beaune. In the early
eighteenth century, Beaune meant red burgundy; Chablis meant white.
This caught on and around the world Chablis became a synonym for dry
white wine. Today, Domaine Louis Michel is one of the leading
family-held estates in Chablis, not only in terms of production, but
also in the reputation they have gained as producers of consistently
high quality Chablis. The soils of the area are rich with Kimmeridgian
limestone. It is in these soils, which provide a clay-limestone-marl
mixture, that the full character of the vine is revealed. The
characteristics of the Chablis wines are quite distinct. These wines
are regarded for their pale yet bright colors and for being dry yet
fresh. In addition they are slightly acidic, lively and elegant.
Chablis improves by being kept for at least two years from the vintage
date before being drunk. The Michel philosophy is 'Let the wine make
itself, as far as possible”. In sticking to this philosophy Jean-Loup
Michel uses no barrels. He vinifies strictly in stainless steel vats
equipped with a cooling system that allows total control over the
temperature, and thus the rate, of the fermentation. His objective is
to make wines which retain the distinctiveness of the vineyards from
which they are produced. Michel relies entirely on modest yields to
produce the concentration and intensity of character for which his
wines are known. "Louis Michel has long been the reference point for
tank fermented Chablis. I have been a huge admirer of his wines for
years. Why? They are perhaps the purest expressions of the stony
Chardonnay fruit grown on the limestone slopes of this northern
