2007 Silver Oak Cellars Cabernet Sauvignon Alexander Valley
Cabernet Sauvignon: 1500ml
$125.99
about this wine:
Silver Oak's Alexander Valley Cabernet Sauvignon is drawn predominantly from their three Alexander Valley estate vineyards and reflects a blend of their characteristics. The rich cassis and berry flavors of wines from the Miraval vineyard are balanced by the bright, black cherry aromas and firm acidity of wines from Red Tail vineyard. The serpentine soils of the Geyserville vineyard yield wines with a black-pepper spiciness that adds zest to the final blend.

Deep red, almost opaque, core with lighter hues towards the rim. The nose opens with cherry, fig and plum, supported by oak and vanilla with a hint of flowers. On the palate, the wine is medium to full bodied and showcases flavors of black fruit, mocha and herbs with a display of rustic tannins and ample acidity. At present, this should be decanted and served with a nice cut of red meat. Yet as the wine develops in the bottle over the next few years (best from 2016-2020), it should integrate and become the elaborate wine that has made Silver Oak so well known. A perennial customer favorite!

An elegant Silver Oak from this very fine vintage. It's soft and herbal, in the way of Alexander Valley Cabernets, with tobacco, blackberry and subtle oak flavors. Drinking well now, and should age for a very long time.
