Note: from a .60 ha parcel where two-thirds of the vines are more than 70+ years of age. Interestingly, this is not quite as complex as the Guettes but it's more elegant with notably ripe aromas of cassis, plum and black cherry that dissolve seamlessly into mineral-driven, firm and delicious middle weight flavors that possess fine length and an almost delicate quality to the finish. A Savigny of finesse.

The 2008 Gravains was very much on form and simply singing at the time of my visit. The bouquet is deep, complex and very, very fine in '08, as it jumps from the glass in a blend of pure black cherries, dark berries, dark chocolate, complex soil tones, orange zest and a smoky topnote. On the palate the wine is full-bodied, suave and beautifully balanced, with ripe tannins, impeccable focus and outstanding length and grip on the classy and very transparent finish. A superb bottle. (drink 2016-2040)

Fresh plum and plum distillate tinged with ginger and white pepper pungently scent the Pavelot 2008 Savigny-les-Beaune Gravains, and these are allied on a bright, lean, yet phenolically-refined palate with stimulating salinity. There is a levity here that compliments the wine's ethereally distilled fruit aspect and its almost citrus-like brightness. This finishes with spicy, saline, tartly red-fruited, and subtly chalky persistence. Opinions are bound to divide over this instance of 2008 displaying white wine-like virtues. I suspect that it will remain vigorous for more than a decade. --- David Schildknecht

About Winery

Of the nearly 180 producers who produce and bottle wines from Savigny les Beaune, the estate of Jean-Marc Pavelot has earned the illustrious title of the finest wine maker in the village. After evaluating several consecutive vintages, spanning literally hundreds of samples and finished bottlings, Allen Meadows (author and publisher of Burghound) was quoted in 2004 as saying, "Pavelot is indisputably making the finest wines in the village and in particular, they age extremely well."

Essentially a practice incorporating the most practical applications as found in both biodynamic as well as traditional vineyard management, lutte raisonnée allows the flexibility to control vineyard abnormalities while avoiding undue applications to one's soil. Through this practice, the Pavelot's have consistently fashioned the most sought after, high-scoring, terroir-driven wines of the appellation for decades.
