Fourchaume
115 ha for the appellation (principle Premier Cru - right bank). It is the most famous of the Premiers Crus. Marl-rich topsoil, more or less deep depending on location of the vineyard, creates complex, rich wines, perfect for cellar maturation.
Characteristics of the appellation:
Very aromatic bouquet, combining fruity and floral notes. Nicely elegant palate that blends power, raciness and roundness.
Food-wine matches:
Fish, seafood and shellfish, grilled or in a cream
sauce. Poultry and white meat, grilled or in a cream sauce.

A very Chablis-like nose of tidal pool hints, green fruit and wet stone gives way to notably rich and generous flavors that remain very fresh and vibrant, all wrapped in an intense and sappy finish that is presently on the fruity side though I suspect that this character will abate with age.

The 2009 Chablis Fourchaume (from young vines in Vaulorent) is one of the more linear wines here. It impresses for its length, finesse and gorgeous finish. With time in the glass the fruit begins to emerge, yet this remains a tightly-wound, inward style, especially for the year. Anticipated maturity: 2013-2017. -AG

A very fresh version of Fourchaume, offering aromas of green tropical fruits and orange zest, plus a whiff of oyster shell reduction. Then big, ripe and quite dry, displaying an impressive combination of volume, definition and freshness. The orange zest note carries through in the mouth. A rich but firm version of Fourchaume with a dusty, tactile finish.
