The Romer du Hayot has a subtle bouquet that demands coaxing from the glass, with notes of honey, white flower and leesy aromas. The palate is quite compact at the moment, but with good acidity and a crisp, viscous finish. Not the most expressive Sauternes but it has potential. -Neal Martin
