30% chardonnay, 25% pinot meunier, 45% pinot noir. A blend of 77 crus, reserve wines comprise 10-20% of the final blend, depending on the harvest. Pale straw color. Buoyant aromas of ripe lemon, sweat, and earth lurk in the background. Round in texture with flavors of honeyed pear, those earthy notes continue onto the palate and finish of this medium bodied Champagne.

Light gold. Musky pear and peach pit aromas are complemented by brown butter and dried flowers. Chewy and a bit sweet, offering spun sugar and cling peach flavors and a hint of white pepper. This rich, fleshy and seemingly off-dry Champagne would work well with rich, creamy dishes or blue cheeses.

Mumm's new generation of Cordon Rouge bottlings is a pleasure. The wine has depth and great full swathes of pear and red apple fruit flavors. It is well integrated, with initial softness tightened up with acidity and yeast flavors. - R.V.

Toast and dried fruit notes mix in this very harmonious dry Champagne, which is full of flavor-dried apricot, candied orange peel, nut and smoke-but still elegant and light-weight. The rich, toasty note lingers on the vibrant finish. Drink now through 2020. -AN
