The 1991 Cabernet Sauvignon (a fall release) may turn out to be Arrowood's finest regular bottling of Cabernet Sauvignon. Made from a blend of 80% Cabernet Sauvignon 7% Merlot 5% Cabernet Franc and the rest Malbec this deeply-colored wine possesses a rich fragrant nose of cassis herbs and subtle oak. Sweet ripe and medium to full-bodied with well-delineated acidity and moderate tannin this beautifully-made authoritatively-flavored elegant wine should drink well for 15 or more years. All the Arrowood red wines from the 1990 vintage forward display a more natural texture and have largely been bottled unfined and unfiltered where possible. This departure in philosophy for Arrowood has resulted in wines with more complex aromatic profiles and wonderfully rich full-flavored personalities.
