If you are looking for a sex in the bottle type of wine, look no further. Incredibly sensuous, the texture combines the best elements of silk, cashmere and velvet. The perfectly ripe fruits range from black plums to even...

The Wine Independent, September 2023

A blend of 53% Merlot and 47% Cabernet Franc, the 2000 Cheval Blanc has a medium garnet-brick color. It explodes with an amazingly complex array of fragrant earth and exotic spice scents, leading to a core of raspberry...

Robert Parker's Wine Advocate, June 2010

Coming out of a relatively dormant state this 2000 is a spectacular Cheval Blanc. Of recent vintages I think only the 2009 can give it a run for its money. A blend of 53% Merlot and 47% Cabernet Franc the wine has a sweet...

Decanter,

Deep to very deep red. Sumptuous aromas of raspberries, blackberries, and menthol, full ripe and perfumed but restrained. The rich attack still shows powerful tannins, and youthful, firm acidity. It's taut and spicy...

A very nice nose of blackberries, dark chocolate, and flowers. Full bodied and smokey, with a meaty, mushroom, tobacco, and berry character. Wonderfully long, long finish to this muscular wine with fine tannins. This is...

Vinous, September 2021

The 2000 Cheval Blanc is a wine that I have encountered more than a dozen times. Now at just over 20 years of age (how time flies - I remember tasting this from barrel), it has a lovely, quite beguiling bouquet of brambly...

Wine Spectator, January 2016

A light menthol hint gives way to bay and tobacco leaf notes, which hold steady throughout, while the core of dark currant and fig fruit flavors takes on a warm, macerated, almost hedonistic feel. The finish has a tarry...

Chateau Cheval Blanc is a Premier Grand Cru Classe “A” estate located near Pomerol, but within the commune of Saint-Emilion. Its 39 hectares are divided into forty-five plots. While most of the appellation's other famous estates have limestone soil, Cheval Blanc's soil is alluvial, with roughly equal proportions of gravel and clay.

The vineyard has an original combination of grape varieties: 49% Cabernet Franc, 47% Merlot, and 4% Cabernet Sauvignon. Each plot has its own specific profile and, to a certain extent, are treated like separate vineyards because of differences in the age of the vines, grape variety, soil type, surface area, type of rootstock, etc. The combination of these many facets accounts for Cheval Blanc’s great complexity.

Archives show that vines have been grown at Cheval Blanc at least as far back as the 15th century, but the most prestigious part of Cheval Blanc's history can be dated from 1832 when the core plot of the present-day estate was purchased by Jean-Jacques Ducasse, President of the Libourne Trade Tribunal. Over the next twenty years, the purchase of plots belonging to Chateau Figeac led to the vineyard as we know it today.

The impressive 6,000 square-meter cellar adjacent to the chateau, designed by Christian de Portzamparc and inaugurated in June 2011, houses a state-of-the-art winemaking facility and features two enormous waves of white concrete that rise magnificently out of the ground. There is a garden of wild grasses atop an artificial hill, whose gracious curves are overlooked by the chateau. The wine cellar holds fifty-two concrete vats in six rows.

Formerly known as vin de Figeac, this wine was first sold under the name Cheval Blanc in 1852. The first gold medal won by Cheval Blanc came at the 1878 Universal Exhibition in Paris and that distinction appears on the label.

Each vineyard plot is vinified separately. At the start of fermentation, the juice is gently pumped over three times daily. As fermentation proceeds, pump-over frequency decreases and is eventually stopped when the desired level of extraction has been reached.

The young wine is aged 16 to 18 months in new French oak barrels. Six to seven different coopers are used to ensure complexity and harmony. During this period, the wine is racked by hand five to seven times. Blending takes place after the first three months.

The 2000 Cheval Blanc is a Bordeaux Blend wine hailing from the renowned Bordeaux region in France. This elegant red wine is produced by the esteemed Cheval Blanc winery, known for their exceptional craftsmanship and commitment to quality. With a deep, ruby-red color, this wine is visually striking and alluring.

On the nose, the 2000 Cheval Blanc exudes a captivating bouquet of brambly red berries, iron rust, Provençal herbs, and clove. The aroma is powerful and enveloping, drawing you in with its complexity and depth. As you take your first sip, you'll experience a medium-bodied palate with firm, stocky tannins and good backbone. The wine reveals flavors of dark currant, fig, and black fruits, which take on a warm, macerated, and almost hedonistic feel.

The finish of this wine is exceptionally long, with a polished and refined quality. It has a light iron accent and a tarry hint, adding further layers of complexity. The acidity is finely beaded, contributing to the overall harmony and balance of the wine. This 2000 vintage is so caressing and languid that you almost lose sight of how long the finish actually is.

Renowned wine publications have praised the 2000 Cheval Blanc for its exceptional quality. Wine Spectator awarded it a score of 94, describing it as "lovely" and "polished." Wine Enthusiast gave it an impressive score of 97, highlighting its "mysterious wonderful perfume" and "explosion of richness." Robert Parker's Wine Advocate awarded it a near-perfect score of 99, calling it a "spectacular" and "legend in the making" wine.

The 2000 Cheval Blanc is a wine that can be enjoyed now, as the tannins have nearly melted away. However, it also has great aging potential and can be cellared for the next 25-30 years. This wine is a true masterpiece, showcasing the artistry and excellence of Cheval Blanc winery. Indulge in its sensuous texture, perfectly ripe fruits, and nuanced flavors for a truly exceptional wine experience.
