The 2005 Cabernet Sauvignon is a beauty. Aged in 400-liter puncheons (as winemaker Philippe Melka believes the larger size helps tame some of the naturally high tannins from this mountain site) this wine exhibits a deep ruby color a beautiful nose of melted licorice spring flowers cassis and hints of blueberry and chocolate. It is elegant full-bodied. refreshing and intense. The wine was completely fermented and aged in puncheons before bottling. It should drink nicely for at least 12-15+ years
