Flavorwise, it's enormously rich, suggesting oranges, limes, honey, vanilla, toast and the sweet, yeasty doughiness of a brioche pastry. Really gorgeous, a worthy followup to the fabulous 2005 La Rêve.

Very much a true Blanc de Blancs in terms of its lightness and its graceful step, the latest Le Rêve does not lack in the least for complexity or range, and whatever it might sacrifice in sheer power is more than made up for by elegance. It is charged by a very fine and insistent mousse and smacks of roasted lemons and creamy yeast from front to back. Its obvious polish makes it easy to sip on its own, but it would also serve as an ideal companion to any number of milder, delicately sauced seafoods from scallops to sole.
