The 2007 Château Chalon is a modern classic, a vintage with good ripeness that kept very high acidity. The wine shows well above the 2008, though not quite reaching the level of 2005. It has all the telltale aromas of a Jaune: the morels, the curry and with something mineral, reminiscent of diesel, earthy and fresh. The palate is pungent, sharp and with weight, with persistence and focused, clean flavors. A superb 2007.- LG
