Based in a range of cru sites that can take the collective name "Vaillons" - notably on fruit from Sechet and Roncieres - Billaud-Simon's 2007 Chablis Vaillons offers a wealth of nuanced characteristics one cannot help but call "mineral" however hard it might be to become more specific. I envision clam broth and shrimp stock larded with smoky bacon and sweet bay scallops with shavings of truffle. Yes there is something one would call fruit too: lemon pineapple and peach in a bright prominently but not tartly acidic mode. Polished and subtly creamy this palpably extract-rich wine evinces plenty of lift and refreshment as well as fascination in its long palate-staining chromatographic finish and that is also what you can expect over the next 4-5 years at least.-DS

Here the nose is a step up in elegance and refinement with a pure citrus and floral suffused aromatic profile that also oozes Chablis character before gracefully introducing minerally rich and detailed flavors that possess lovely finishing detail and intensity as well as near perfect balance.
