51% Chardonnay ; 49% Pinot Noir. There is touch of candy and distant suggestions of peaches to be found in both the aromas and flavors of this explicitly champenized offering, but the wine is fixed first and last on articulate yeast and is a complete sparkler that hits all of the right marks. It comes with a fine and decidedly creamy mousse and exhibits a little more depth as well as an extra measure of richness when compared to most of its Brut cousins, and it is kept buoyant and bright from beginning to end by its enlivening, seamlessly fit acidity.
