The 2012 Chablis 1er Cru Vaillons is usually picked the same time as the Vaudesir, both precocious soils. The nose is certainly more complex than the Montmains, with lime and yellow flowers as well as touches of smoke coming through with aeration. The palate is well-balanced with crisp acidity. This is tightly wound, a touch of dried honey developing toward the lively finish, although it does not have the persistency of Fevre’s finest crus. Drink 2015-2022. - NEAL MARTIN
