The Wittmans own about 10 acres of this limestone-rich vineyard, farmed biodynamically since 2004. The wine itself has a cool, chalky texture, with the airiness of seashell-ridden stone. The heat of the alcohol spices the ripe lemon and pineapple flavors, and yet the wine comes off as fresh and lean, with a salty finish that encourages another sip. Give it another eight years in the cellar, at least.
