Wine Enthusiast, June 2022

(WE 95–97 points) Red and black fruits mingle with the firm structure of this dense wine. The tannins are solid while the ripe berry flavors show well against the wine's richness. ROGER VOSS

Gorgeous bright plum colour with violet reflections. The epitome of careful, precise, well-spliced winemaking. Sibling estate Berliquet has perhaps more immediate charm, because there is more power running through it, but...

Chateau Canon is a famous Saint-Emilion estate widely recognized as one of the best in the appellation. The property started out as part of the Clos St. Martin vineyard with only 30 acres. After purchasing it in 1760, by Monsieur Jacques Kanon expanded the estate and its vineyards but then sold it a decade later to Raymond Fontemoing, a Bordeaux wine merchant.

In 1919, the property came into the hands of the Fournier family who invested a lot of time and money, modernizing the estate and vineyards. It remained in their control until the 1990’s but by that time Chateau Canon was having some serious problems: TCA contamination, vine disease, and subsidence of the quarried cellars beneath the property.

When the Wertheimer family, which owns Chanel, acquired the estate in 1996, it was in a sorry condition and they invested in restoring the full potential of Chateau Canon for Premier Grand Cru Classe wines. A period of extensive renovation and replanting was undertaken. The 18th century residence is now entirely restored to the highest standards.

The estate’s 85 acres are planted to 70% Merlot and 30% Cabernet Franc, with the average vine age now close to 30 years. The substantial estate is on Saint-Emilion’s famous limestone plateau close to the town.

Chateau Canon has a walled vineyard at the entrance to Saint-Emilion planted to Merlot. This unique 5,000 square foot parcel is ploughed by horse and hand harvested in traditional style. Its grapes are used in crafting the estate’s Grand Vin.

A blend of 70% Merlot, 30% Cabernet Franc aged 18 months in French oak barrels, 70% new.

The 2021 Canon Bordeaux Blend from Saint Emilion, France is a wine that exudes elegance and finesse. With a gorgeous bright plum color and violet reflections, this wine is a true testament to careful and precise winemaking.

On the nose, the Canon offers a captivating bouquet of cherries, wild berries, licorice, sweet soil tones, raw cocoa, Indian spices, and rose petals. These aromas intertwine beautifully, creating a multidimensional experience that is both refined and seamless.

Medium to full-bodied, this wine showcases a lively spine of acidity and ripe tannins, which provide structure and balance. The palate is greeted with flavors of red cherry, raspberry, blueberry, and blackberry, complemented by notes of slate, saffron, and oyster shell. The layers of complexity found in this vintage are a true marvel, with a long and intensely saline finish that leaves a lasting impression.

The 2021 Canon is a wine of tremendous concentration and class. It has been described as one of the classiest and most complete wines of the Right Bank in this vintage. Critics have praised its finesse, polish, and fantastic length. James Suckling awarded it a score of 97 points, noting its finesse and class, while Robert Parker's Wine Advocate gave it a score of 96 points, describing it as immensely refined and one of the classiest wines of the Right Bank.

This wine is a blend of 71% Merlot and 29% Cabernet Franc, with an alcohol content of 13.5%. It was aged in 50% new oak barrels for 18 months. The harvest took place from September 16 to October 6, ensuring optimal ripeness and flavor development.

The 2021 Canon is a wine that will continue to evolve and impress for many years to come. It is a true gem from the prestigious Saint Emilion region and a must-try for wine enthusiasts seeking elegance and sophistication in their glass.
