This is the same release of Ayala Brut Nature non-vintage that I reviewed a year ago, but
the additional year in bottle has really allowed the wine to blossom beautifully and it is showing
even better than it did last summer. As readers may recall, the cépages here is forty percent
chardonnay, forty percent pinot noir and twenty percent pinot meunier and the wine received no
dosage whatsoever. Today, the bouquet is pure and vibrant, offering up scents of apple, white
peach, beautifully complex soil tones, brioche, dried flowers and discreet smokiness in the upper
register. On the palate the wine is deep, full-bodied, crisp and focused, with a fine core, lovely
soil signature, pinpoint bubbles and lovely length and grip on the complex finish. As this wine is
non-dosé, it really is far better at the table than as an aperitif, but the wine has opened up
superbly with another year in bottle and is drinking impressively well. 2016-2030.
