89+ The new release of José Dhondt’s non-vintage “Rosé de Saignée” Brut is a young wine that needs a couple of years in the cellar, but will be very good with sufficient bottle age. The wine is comprised entirely of pinot noir, and offers up a primary nose of cherries, blood orange, cloves, chalky soil, orange peel and wheat toast. On the palate is tight and young, with plenty of stuffing in the mid-palate, a fine blade of minerality, frothy, pinpoint bubbles and a long, brisk and still quite youthful finish. Today, this is a bit bound up in its structural elements for primetime drinking, but the constituent components are here for a fine bottle with a bit of bottle age.
