Founded in 1689, the auspicious name, "Hinomaru" was conferred on the brewery by the ruling warlord. It remains the only sake brewery in Japan with the right to use the name Hinomaru,representing "Rising Sun," which is synonymous with Japan.

Current President, Mr. Joji Sato, proudly upholds the 330-year old commitment and devotion to excellence in sake making.

Mr. Sato, searched extensively to find the bygone Hinomaru rice varietal. At long last he was entrusted with 30 precious grains of the nearly extinct rice. He carried the grains back to Akita where he and a team of experts slowly propagated the rice. Using 50% YamadaNishiki and 50% Hinomaru Mai, Hinomaru Brewery crafts the masterpiece, that is Kimoto Junmai Daiginjo.

Tasting Notes
Hinomaru Kimoto Junmai Daiginjo has a beautifully complex and mouth-watering umami. This sake has a satiny smooth texture with a nutty aroma and notes of toasted sesame, ripe Mandarin orange, and Asian pear. The mid-palate shows some lovely acidity, coming to a swift dry and peppery finish. Pairs well with rich foods such as: Toro Sashimi, Foie Gras, Liver Paté, and Tempura
