Disgorged in April 2014, Cédric Bouchard's NV Blanc de Noirs Les Ursules (2010) is showing brilliantly, soaring from the glass with scents of mandarin, pear, smoke and clear honey. On the palate, it's full-bodied, ample and layered, with chewy extract and considerable concentration, its vinous profile and evident maturity of fruit tempered, as ever, by lively acids that lend the wine unerring precision, even when it's served at room temperature. Bouchard owns a 0.97-hectare parcel in the north-facing lieu-dit of Les Ursules, and it was this site in the 2000 vintage that he launched his then-fledgling label. - William Kelley
