The balance of all three was just right to ensure top-quality fruit at harvest. This is a blend of 75% Pinot Noir and 25% Chardonnay with 4g/l dosage. So although this is an extra brut style, the 5% vinification in oak casks, 10 years on its lees, and partial malolactic fermentation gives a creamy, toasty edge to the focussed palate. With flavours of hazelnut praline, lifted florals and real purity of peachy citrus, this is a complex, vinous Champagne that needs time to shine.

Billecart-Salmon's intense and vinous 2007 Vintage blends 75% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne (Mareuil-sur-Aÿ and Aÿ) with 25% Chardonnay from the Côte des Blancs villages Avize...   Billecart-Salmon's intense and vinous 2007 Vintage blends 75% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne (Mareuil-sur-Aÿ and Aÿ) with 25% Chardonnay from the Côte des Blancs villages Avize, Cramant, Mesnil-sur-Oger, Oger, Chouilly and Vertus. Vinified in stainless steel, the bouquet indicates pure, ripe and refined fruit with delicate brioche and morel scents as well as fine chalky and super discreet marzipan and nougat notes. Full-bodied and very intense in its fruit flavors, this is a rich, persistent, pure, just ripe and refined 2007 with a finish that is remarkably fresh but not fully round. Disgorged as Extra Brut in December 2017, tasted in November 2018.

Billecart-Salmon

Champagne Billecart-Salmon is an independent and family-owned champagne house situated in the charming village of Mareuil-sur-Ay in the heart of Champagne. It was founded in 1818 after the marriage of Nicolas Francois Billecart and Elisabeth Salmon.

Since then, for almost 200 years, every member of the Billecart family has continued to stand by their oath of giving priority to quality and striving for excellence. Today, the 6th generation is represented by Francois and Antoine Roland-Billecart, who lead this independent house with the support of their father, Jean Roland-Billecart. The firm owns 74 acres of its own vines and purchases grapes from growers comprising another 346 acres. Ninety percent of the fruit for Billecart comes from 40 crus within a 20-mile radius of Epernay.

The Billecart portfolio includes the Brut Reserve, Brut Rose, Extra Brut, Demi-Sec, Brut Sous Bois, Blanc de Blancs Grand Cru, Cuvée Nicolas François Billecart, and the ultimate expression for the House, the vintage Le Clos Saint Hilaire, a blanc de noirs Champagne sourced from a tiny plot planted in 1964.

The winery employs sustainable viticulture practices, without the use of pesticides and herbicides, and the wines are aged in oak in Billecart's limestone cellars.
