The balance here between all the crushed rocks, stones, ripe citrus, green apples, lemon peel, flowers, honey, brioche, and racy acidity is just perfect. The bubbles are elegant, long, and fresh, giving you the perfect level of effervescence and fruit. I have tasted this at least 6 times, and with the exception of one bottle, they have all been extraordinary. I do think the initial bottle I tasted, which I posted a note on previously might have been opened too soon after shipping because subsequent bottles have all been better.98
