From the 2.4ha of planted vines rooted in rocky loam and volcanic ash-red soils of Mon Chevalier vineyard in Knights Valley, which rises to 182 metres, comes this blend of 90% Cabernet Sauvignon, 5% Cabernet Franc, 2% Merlot, 2% Malbec, and 1% Petit Verdot. Native yeast fermented in stainless steel tanks and puncheons and aged for 16 months in 85% new French oak. Unfined and unfiltered, Mon Chevalier refers to Luc and Judy Morlet's son, Paul, their 'Knight'—a beautiful deep ruby colour. Very pure dark fruits on the nose, with a dried floral character, gorgeous garrigue notes, and lifted dusty minerals, like brown or red scorched earth—so distinct. Medium to full-bodied, with focus and intensity driving the rich black fruit character, super fine, super silky tannins, and sweet brown Indian spices that bring lift to the tension-fuelled finish. Super expressive and polished.

Coming from the Knights Valley appellation, the 2021 Cabernet Sauvignon Mon Chevalier is a beautiful, full-bodied, concentrated effort that has ample dark fruits (blackberries, currants), notes of baking chocolate, graphite, and savory herbs, ripe tannins, a broad, layered mouthfeel, and outstanding length. Give it 2-4 years and it's going to have at least two decades of prime drinking.
