Laurent-Perrier’s “Ultra Brut” was one of the very first Brut Nature bottlings I drank in my early days in the wine trade, as it was first released in 1981, which dovetailed with my start in the wine business. The current release is crafted from a cépages of fifty-five percent chardonnay and forty-five percent pinot noir. The wine is given at least six years aging on its fine lees prior to disgorgement. The wine delivers a very refined bouquet of apple, white peach, bread dough, white lilies, chalky minerality and a topnote of raw almond. On the palate the wine is deep, full-bodied, brisk and complex, with excellent depth at the core, fine mineral undertow, a lovely spine of acidity, elegant mousse and a long, beautifully balanced finish. This is an excellent Brut Nature.
