Deep garnet-black with a hint of brick, the 2006 Hillside Shiraz has pronounced notes of smoked game, hung meat, dried plums and kirsch, some cigar boxes, Chinese five spice and mocha. Structured, rich, very full and opulent on the palate is has a medium-firm level of rounded tannins and a long spicy finish. This is a great example of how well Aussie wine can age! This is still showing plenty of ripe, juicy and sumptuous primary fruits which are complemented by touches of brown sugar. The tannins have melted away making for a soft, plush and totally open wine that is performing admirably right out of the gate. Despite over a decade of age, this is surprisingly dominated by delicious primary flavors with just a hint of savory. This is at peak right now and there is no reason to wait.
