A renowned vintage in Sauternes, showcasing why this vintage of Fargues is so sought after. Burnt caramel, saffron, cumin, spiced almonds, candied ginger, gunsmoke, this dances across the palate and draws out into a long...

Beautiful light apricot color. The nose boasts lots of stone fruits including peach nectarine and apricot. A little pear is present as well. More fruit driven and less spicy than other examples. This has great acidity and...

Chateau de Fargues has an extravagant bouquet, superb flavor and sometimes develops minerality with age.

Château de Fargues 2007 is a classic botrytised Sauternes from an 18-hectare vineyard owned by the Lur Saluces family, historically linked to Château d’Yquem. The blend is 80% Sémillon and 20% Sauvignon Blanc. Several reviewers note this as a standout year for the estate, and the best reviews are unequivocal: Jane Anson scores it 98 points, calling it “a renowned vintage in Sauternes,” while Wine Advocate rates it 97, with Neal Martin concluding, “This is a fabulous 2007, one of the wines of the vintage.”

The wine’s richness is backed by hard numbers. Martin (Wine Advocate) reports 13.9% alcohol and 134 grams per liter of residual sugar, and details a harvest that “commenced on September 11” before restarting “October 2–24” as botrytis developed slowly. Anson also cites harvest timing and notes “six passes through the vines,” adding that it “needs a good long carafe to open up.”

In the glass, the tasting notes converge on depth, spice, and a clear line of freshness. Wine Spectator (95 points) describes it as “rich and caressing” with “toasted coconut, dried orange, ginger cream and mango,” finishing with “macadamia nut and papaya,” and recommends drinking “now through 2037.” Wine Advocate finds a nose that starts quiet, then opens to “clear honey, pressed flowers, almond and a distant scent of the sea,” while praising an “utterly harmonious” palate with a “thrilling, edgy finish.”

Vinous (94 points, Martin) similarly notes a bouquet of “clear honey, quince and saffron,” plus a “very well balanced” palate with “decent acidity” and “stem ginger towards the finish.” The Wine Independent (94) emphasizes “brown sugar and toffee” over “apple butter and dried persimmons,” ending on a “lingering honey-nut note.” Production is reported by Wine Spectator at 1,750 cases, underscoring its relative scarcity.
