Another big-time winner the 2007 Profile (60% Cabernet Sauvignon 15% Merlot 15% Cabernet Franc 6% Petit Verdot and 4% Malbec) may be the finest wine I have ever tasted from Merryvale. It exhibits an opaque purple color along with classic tobacco leaf black currant spicy oak chocolate licorice and graphite characteristics a big full-bodied mouthfeel and tremendous depth persistence and length. This proprietary red should continue to put on weight and last for 15-20 or more years. Very impressive!

On the nose dark notes of cocoa black licorice and saddle leather support a core of blackberry and lavender framed by a touch of clove. The wine offers supple texture as purple fruit coats the palate and slightly dusty tannins provide structure. With fruit that is prominent but not overpowering this stays in beautiful balance throughout. In a sea of overripe fruit-forward Napa cabernet Merryvale has crafted a standout with this elegant nuanced wine. Drinking very nicely in its youth it should really hit its stride in another 2-3 years and drink well for at least a decade after that.
