Proprietor and vintner George Noble began making Merlot with friends in a garage and soon, Petite Sirah and Cabernet Sauvignon also piqued his interest. The first commercial wine was the 2004 Cabernet, released in 2010.

The Noble estate lies in the hills above St. Helena, at 1,500 foot elevation, where he and his wife, Patricia, planted Cabernet vines on the rolling terrain. The Nobles, and winemaker David Lattin, are dedicated to producing top Cabernet Sauvignon and Petite Sirah and source fruit only from ultra-premium vineyards.

Noble Wines are produced in small quantities and every aspect of the winemaking, from vineyard to harvest to blending, is held to the highest standards. The Nobles strive to live up to their name and produce a smooth, perfectly food-friendly Cabernet Sauvignon on par with European first growth estates.

All Noble Wines share qualities that make them easy drinking, food-friendly wines. The winery believes in cellaring their wines 6+ years before release to offer their customers wines that are ready to enjoy.

The Cabernet Sauvignon in this wine is supplemented with a small amount of Petite Sirah which adds structure, color, robust black fruit and complexity. The grapes came from the Rutherford bench, Pritchard Hill and St. Helena. The wine matured in French oak barrels, 50% new, for 33 months prior to bottling.
