The 2012 Chablis 1er Cru Secher is a sub-climat of Vaillons. Drouhin owns 1.5 hectares of 45- to 50-year-old vines and this cru debuted in 2008. In fact, it was here that they first trialed with biodynamics. The 2012 was picked on the same day as the Vaillons and vinified in the same manner. The nose is similar to the Vaillons, but with a little more delineation and spiciness. The palate is medium-bodied and very harmonious with well-judged acidity. There are subtle notes of bell pepper and spice toward the elegant finish that leaves with a salty tang. Very fine. Drink now-2020. -Neal Martin
