The fierce acidity pushes the flavors toward a mineral-oil note, something that dissipates into smokiness as the wine takes on air. What comes up is an intriguing spice, very Puligny, along with primary green grape-skin notes. Give this two or three years of cellar time and it should prove to be a bold wine to serve with grilled langoustines.
