Given that this reflects very ripe material backed by over 90 grams of residual sugar, it’s amazing how much of the cress-like, green herbal aspect of the site, so prominent in this year’s Kabinetts, is on hand here as... expand Given that this reflects very ripe material backed by over 90 grams of residual sugar, it’s amazing how much of the cress-like, green herbal aspect of the site, so prominent in this year’s Kabinetts, is on hand here as well, even on the nose. But those aspects are tempered by a glossy, subtly creamy texture, and allied to a jellied expression of white peach and pear that reflects the extreme ripeness and the bit of botrytis involved.
