Utterly delicious." Decanter also provided insights into the winemaking process employed by Nico Cueva, which includes whole bunch pressing, sur lie aging in neutral casks for 22 months, and native yeast fermentation. The wine is unfined and unfiltered, maintaining its natural characteristics.
