An 80/20 split between chardonnay and pinot noir, this has an ethereal spicy thread, sweet citrus, plus some redder fruits too; floral and fragrant, very pretty. The palate's boldly flavored, precisely cut and compressed with intense minerally acidity. The lemon and nougat flavors carry deep and the finish has superb focus. Drink from 2018.

This expressive version offers a rich tapestry of baked currant, ground anise, clove, kumquat, fruitcake and toasted coconut flavors, framed by fine, crystalline acidity. The 2007 Coeur de Cuvée is drinking very well, opening in the glass with a lovely bouquet of crisp green apples, beeswax and citrus oil, complemented by spicy top notes of cinnamon and ginger. On the palate, the wine is medium to full-bodied, vinous and incisive, with a textural attack that segues into a tangy, acid-driven core and a mouthwatering, saline finish, set off by an ultra-fine pinpoint mousse. While this Champagne's energy and integration make it a lovely drink today, it will reward more than a decade's bottle age. - William Kelley

92+ The 2007 Vilmart Cie “Coeur de Cuvée” is composed of its customary blend of eighty percent chardonnay and twenty percent pinot noir. The wine is really lovely, wafting from the glass in a complex blend of pear, crème patissière, lovely soil tones, a touch of vanillin oak and a smoky topnote. On the palate the wine is deep, full-bodied, crisp and still fairly tightly-knit behind its structural elements, with a fine core, very elegant mousse and impressive length and grip on the still quite youthful, but focused finish. This is already a lovey wine, albeit on the young side, and I would be inclined to tuck it away in the cellar for a year or two and allow it to come out more fully from behind its girdle of acidity.
