Just released this latest non-vintage from Jacquesson is very steely austere cool and elegant with apple and citrus acidity. It has freshness and balance. Still young but very complete.

Lemon white flowers spices and crushed rocks are some of the notes that inform this deep satisfying Champagne. A round creamy finish wraps things up in style. The 735 got better and better over time always a good sign. The 735 is 72% 2007 juice 47% Chardonnay 33% Pinot Noir and 20% Meunier. It is a bit richer rounder and more immediate than the 734 not a bad thing for a wine meant to be enjoyed on the young side. This bottle was disgorged in the first quarter 2011. Showing subtle effervescence with golden straw color the bouquet... 47% chardonnay 33% pinot noir 20% pinot meunier. 72% of the cuvee is from the 2007 vintage while the rest comes from reserve wines of older vintages. Showing subtle effervescence with golden straw color the bouquet highlights moderately intense autolytic characteristics of toast caramelized mushrooms and woodsy scents. Fairly reined in on the palate there's a bit of weight on the attack with the fruit fading quickly towards the soft finish. Flavors of dried apricots and peaches mingle with some roasted nuts and toast. A great example of wines made in the richer toasty spectrum of champagne and should fill out with some more time on cork. Disgorged 1st trimester of 2011.
