From the Lallier Experts Collection, the Blanc de Blanc Brut NV is made from a Côte des Blancs selection with some fruit from Aÿ that is fermented 90% in stainless steel and 10% oak, with 80% of the blend undergoing malolactic fermentation. Aged a minimum of three years on lees, it opens to crunchy aromas of lemon, green apple and chalk followed by a light-bodied, linear palate with incisive acid and a finish that is punctuated by a pinpoint of dosage sweetness. Disgorged March 2022 and finished with an eight gram per liter dosage. - Sarah Mayo
