I love how well the non-vintage bottlings from Ployez-Jacquemart evolve with bottle age. This particular bottle of their Extra Brut Rosé had been in my cellar for two and a half years and was absolutely singing when opened on Christmas Eve. The complex and utterly vibrant nose wafts from the glass in a blaze of white cherries, tangerine, chalky soil tones, rye toast, smoke and a touch of clove in the upper register. On the palate the wine is deep, full-bodied, crisp and absolutely wide open, with a lovely core, very refined mousse, excellent balance and grip and a very long, complex and focused finish. This bottling was lovely on release, but the extra bottle age has allowed it to blossom fully and the wine is drinking with great style today. Age your non-vintage bottlings!
