Domaine de Bila-Haut’s Occultum Lapidem 2012 is a flagship red from Michel Chapoutier’s Roussillon project near Latour-de-France, bottled under the Côtes-du-Roussillon Villages Latour-de-France AOC. The estate is known for biodynamically oriented farming and hand harvesting, and this cuvée is built around Syrah, Grenache, and Carignan, with Syrah taking the lead in 2012. The vineyards sit on a mix of schist and gneiss, with limestone also part of the broader geological picture in this part of Roussillon, a warm Mediterranean zone shaped by the drying Tramontane wind.

In the cellar, the approach is traditional and structured: grapes are 100% destemmed, macerations are long (around four weeks), and élevage is split between tank and large-format oak (demi-muid), aiming for polish without losing the site’s darker, mineral feel. Alcohol is reported around 14% for this vintage, with some variation across sources.

Critically, this is an excellent review and a strong value signal for the category. Jeb Dunnuck, writing in *Robert Parker’s Wine Advocate*, scored the wine 94 points and described “dark, mineral-laced aromas and flavors of smoked earth, licorice, wild herbs and blackcurrants.” On the palate, he emphasizes that it is “firm, structured and age-worthy,” with “solid mid-palate depth, ample tannin and a beautifully focused finish.” Dunnuck calls it “a superb value,” adding that it should improve with short cellaring and offers “12–15 years of ultimate longevity.”

Taken together, Occultum Lapidem 2012 reads as a serious, site-driven Roussillon red: ripe and dark-fruited, clearly savory in tone, and built on tannin and mineral structure more than overt sweetness or softness, with the track record—at least from Dunnuck—suggesting it’s capable of rewarding patience.
