Wine Enthusiast, December 2022

Fermented in wood with a touch of spice and toast on the palate, this Champagne is beautifully textured and structured. The Chardonnay gives the wine a steely edge that suggests the bottling could age, so wait to drink...

jamessuckling.com, November 2023

Attractive nose of brioche, walnuts, salted almonds and baked apples. Some nutmeg. Lovely richness of flavor yet so bright, medium-bodied, with a salty freshness and very fine bubbles. Excellent length. 2016 base vintage...

jebdunnuck.com, November 2022

The NV Champagne Sous Bois Brut pours a medium yellow to deeper straw hue, and the nose is warming and more generous with notes of toast, red fruit of ripe raspberry, spice, and espresso. The palate is rounded, with rich...

Vinous, May 2023

Rich, radiant and resonant, the Brut NV Sous Bois is wonderfully expressive. Dried orchard fruit, spice and chamomile build nicely with aeration. This release is based on 2015 with 40% reserve wines, a blend that works so...

Wine Spectator, September 2023

Fragrant, with hints of graphite, cherry blossoms and spices, revealing a firm frame of vivid acidity that's tightly meshed with flavors of blackberry tart, lemon granita and salted Marcona almond. Shows a raw...

The Wine Independent, November 2023

The Brut Sous Bois NV is 100% barrel fermented which is a departure from the Billecart-Salmon signature practice of stainless-steel cold fermentation, yet the result does not compromise freshness. A blend of 40%...

Wine & Spirits, December 2020

The base wine for this blend is fermented and aged in old, neutral oak barrels, the wine aged on the lees for more than six years in bottle. Those factors contribute to its toasty richness, and add potency to its earthy...

Champagne Billecart-Salmon is an independent and family-owned champagne house situated in the charming village of Mareuil-sur-Ay in the heart of Champagne. It was founded in 1818 after the marriage of Nicolas Francois Billecart and Elisabeth Salmon.

Since then, for almost 200 years, every member of the Billecart family has continued to stand by their oath of giving priority to quality and striving for excellence. Today, the 6th generation is represented by Francois and Antoine Roland-Billecart, who lead this independent house with the support of their father, Jean Roland-Billecart. The firm owns 74 acres of its own vines and purchases grapes from growers comprising another 346 acres. Ninety percent of the fruit for Billecart comes from 40 crus within a 20-mile radius of Epernay.

The Billecart portfolio includes the Brut Reserve, Brut Rose, Extra Brut, Demi-Sec, Brut Sous Bois, Blanc de Blancs Grand Cru, Cuvée Nicolas François Billecart, and the ultimate expression for the House, the vintage Le Clos Saint Hilaire, a blanc de noirs Champagne sourced from a tiny plot planted in 1964.

The winery employs sustainable viticulture practices, without the use of pesticides and herbicides, and the wines are aged in oak in Billecart's limestone cellars.
