The NV Brut Blanc de Blancs Grand Cru is from Chardonnay grapes sourced in Avize, Chouilly, Cramant and Mesnil-sur-Oger. Based on the 2013 harvest plus 30% reserve wines and fermented in stainless steel, this blend opens with an amazingly pure but intense and deep bouquet with yellow-fleshed fruit aromas intermixed with chalky and lemony notes as well as hints of orange blossoms and iodine. Full-bodied and intense yet pure and finessed on the palate this is a rich yet very precise and elegant Blanc de Blancs with a persistent structure and a long, dense, almost lush finish. - Stephan Reinhardt

Lightly toasty and creamy in texture, yet well-cut and vibrant throughout, this shows a minerally base note underscoring the flavors of poached pear, candied lemon zest, toasted brioche and pickled ginger. High-pitched citrus and orchard fruit scents are complemented by notes of honeysuckle, lemongrass and chalky minerals. Spicy, focused and mineral-driven, with intense Meyer lemon, tangerine and pear skin flavors given depth by a hint of brioche. A note of smokiness builds on the finish, which hangs on with outstanding floral persistence. - Josh Raynolds

The balance of this wine is immediately striking. Everything is in its place: the crisp apples, tight acidity and the mineral texture are all just right. It’s a delicious, perfumed and fragrant wine that is ready to drink... The balance of this wine is immediately striking. Billecart-Salmon

Champagne Billecart-Salmon is an independent and family-owned champagne house situated in the charming village of Mareuil-sur-Ay in the heart of Champagne. It was founded in 1818 after the marriage of Nicolas Francois Billecart and Elisabeth Salmon.

Since then, for almost 200 years, every member of the Billecart family has continued to stand by their oath of giving priority to quality and striving for excellence. Today, the 6th generation is represented by Francois and Antoine Roland-Billecart, who lead this independent house with the support of their father, Jean Roland-Billecart. The firm owns 74 acres of its own vines and purchases grapes from growers comprising another 346 acres. Ninety percent of the fruit for Billecart comes from 40 crus within a 20-mile radius of Epernay.

The Billecart portfolio includes the Brut Reserve, Brut Rose, Extra Brut, Demi-Sec, Brut Sous Bois, Blanc de Blancs Grand Cru, Cuvée Nicolas François Billecart, and the ultimate expression for the House, the vintage Le Clos Saint Hilaire, a blanc de noirs Champagne sourced from a tiny plot planted in 1964.

The winery employs sustainable viticulture practices, without the use of pesticides and herbicides, and the wines are aged in oak in Billecart's limestone cellars.
